Chipotle Vinaigrette

This Chipotle Vinaigrette is delicious on burrito bowls, tacos or taco salad. A lighter refreshing sauce to add to your rotation.

Vinaigrette
  • 2-3 tbsp chipotle peppers in adobo sauce
  • 2 tbsp olive oil
  • Juice of 1/2 lime
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp smoked paprika
  • 2 garlic cloves or 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp nutritional yeast
  • 1 tbsp vinegar (I use apple cider)
  • 1/2-1 cup water
  • 2 tsp maple syrup

Instructions

  1. Place all ingredients in blender and blend until smooth. Start with 1/2 cup water and see how you like the consistency.
  2. For lower fat add more water or leave it out completely. You can sub the oil with a small amount of raw nuts like cashews (1/4 cup).
  3. Add to tacos, burrito bowls or taco salad. Also makes a great marinade for tofu!
