Lemon Blueberry Overnight Oats

A refreshing spin on overnight oats that taste like a lemon pie!

Ingredients
  • 1/2 cup rolled oats
  • 1/2 cup blueberries
  • 1 tbsp chia seeds
  • 1-2 tbsp maple syrup
  • 1 tsp lemon extract
  • pinch of salt
  • 1 cup plant milk

Instructions

  1. In a jar or glass container add in all of your ingredients and stir lightly. Cover with plant milk and let sit overnight in the fridge. I like to add a little more maple syrup in the morning when I am ready to eat these and sometimes more fresh fruit. Coconut flakes are a great addition to this as well. Enjoy!
