If you are sick of smoothies and oatmeal for breakfast but still want something sweet and satisfying try this recipe out!
Ingredients
1 cup leftover rice
1 cup chopped mango (fresh or frozen)
1/4 cup coconut milk
1/4 cup water
1/4 tsp vanilla extract
2 tsp maple syrup (divided)
pinch of salt
Instructions
In a saucepan over medium heat add in your leftover rice, water and mango and cook until the rice is hot and the excess water has burned off (about 5 minutes)
Add in your vanilla, coconut milk, 1 tsp of maple syrup and a pinch of salt and cook again until the rice absorbs the milk (about 3-5 minutes)
Add to a plate, drizzle with the extra maple syrup and add any other toppings you like. I love to add coconut flakes and sesame seeds to this! Enjoy!
