Instructions
- Add 1.5 cups rolled oats, 1.5 cups blueberries, 3 tbsp chia seeds, 4.5 tbsp maple syrup, 3 tsp lemon extract, and 3 pinches of salt to a jar or glass container
- Stir lightly to combine
- Cover with 3 cups unsweetened soy milk
- Refrigerate overnight (8+ hours)
- In the morning, optionally add extra maple syrup, fresh fruit, or coconut flakes before serving
