Lemon Blueberry Overnight Oats

A refreshing spin on overnight oats that taste like a lemon pie!

Ingredients

  • 1.5 cups rolled oats
  • 1.5 cups blueberries
  • 3 tbsp chia seeds
  • 4.5 tbsp maple syrup
  • 3 tsp lemon extract
  • 3 pinches of salt
  • 3 cups unsweetened soy milk

Instructions

  1. Add 1.5 cups rolled oats, 1.5 cups blueberries, 3 tbsp chia seeds, 4.5 tbsp maple syrup, 3 tsp lemon extract, and 3 pinches of salt to a jar or glass container
  2. Stir lightly to combine
  3. Cover with 3 cups unsweetened soy milk
  4. Refrigerate overnight (8+ hours)
  5. In the morning, optionally add extra maple syrup, fresh fruit, or coconut flakes before serving
