A delicious and filling oatmeal recipe that is perfect for fall!

Ingredients
1 apple, chopped
1 tsp ginger, minced
2 dates, chopped
1/2 cup rolled oats
1 1/2 cup water
1 tsp of cinnamon
1-2 tbsp vegan vanilla protein powder (optional)
Juice 1/2 lemon
Instructions
In a pot over medium heat add in 1/2 cup of water, the apples, dates, ginger, lemon juice, half the cinnamon and a pinch of salt. Let it cook for about 5-6 minutes until the apples are soft and most of the water cooks off. It turns into a syrup consistency and is so good!
Once that’s done transfer it to a bowl. In your sauce pan add in 1 cup of water and your oats and bring to a a low simmer over medium heat. Add in your protein powder and the rest of the cinnamon. Let cook until the oats thicken to your preferred consistency.
Once done add oats into a bowl and top with the cooked apples. You can add some seeds or coconut flakes to this as well! Enjoy!
