- In a saucepan over medium heat add in leftover rice, water and mango and cook until the rice is hot and the excess water has burned off (about 5 minutes)
- Add in your vanilla, coconut milk, 1 tsp of maple syrup and a pinch of salt and cook again until the rice absorbs the milk (about 3-5 minutes)
- Add to a plate, drizzle with the extra maple syrup and add any other toppings you like. I love to add coconut flakes and sesame seeds to this! Enjoy!
