Savory Cajun Trail Mix

Crunchy, salty, a little sweet, and perfectly spiced. The maple syrup helps everything stick without turning it sweet, and the spray oil keeps it light but super satisfying.

Ingredients

  • 4 cups Chex cereal
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup raw peanuts
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 to 2 tbsp nutritional yeast
  • 1/4 tsp red chili pepper optional
  • 1 tsp salt to taste
  • 2 tsp maple syrup
  • Light spray oil

Optional Add Ins

  • Pretzels
  • Rice crackers
  • Extra smoked paprika for more depth
  • Cayenne if you like it hot

Instructions

  1. Preheat oven to 325°F and line a large baking sheet with parchment paper.
  2. Add Chex, almonds, cashews, peanuts, pumpkin seeds, and sunflower seeds to a large bowl.
  3. Lightly spray with oil and toss to coat.
  4. Drizzle in maple syrup and toss again so everything is lightly sticky.
  5. Add chili powder, cumin, garlic powder, smoked paprika, nutritional yeast, red chili pepper if using, and salt. Toss really well until evenly coated.
  6. Spread in an even layer on the baking sheet.
  7. Bake for 20 to 25 minutes, stirring every 8 to 10 minutes so nothing burns.
  8. Remove from oven once golden and fragrant. Let cool completely so it crisps up.
