These waffles are crispy, fluffy, and made with wholesome ingredients like oat flour and mashed banana. Perfect for a nutritious breakfast!

Ingredients

Dry Ingredients

  • 1 ¾ cups oat flour (or blend rolled oats into a fine flour)
  • 1 tbsp ground flaxseed
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt

Wet Ingredients

  • 1 ½ cups unsweetened plant milk (almond, oat, soy, etc.)
  • 1 ripe banana, mashed (or ¼ cup applesauce)
  • 1 tbsp maple syrup (optional, for a touch of sweetness)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your waffle iron.
  2. In a large mixing bowl, whisk together oat flour, ground flaxseed, baking powder, cinnamon, and salt.
  3. In a separate bowl, combine unsweetened plant milk, mashed banana, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry and stir until just combined, then let the batter rest for 5 minutes to thicken.
  5. Lightly grease the waffle iron if needed, pour in the batter, and cook until golden brown and crisp, about 4–5 minutes depending on your waffle iron.
  6. Serve with fresh fruit, nut butter, or maple syrup. Enjoy!
