These Sticky Asian Noodles are next-level delicious—sweet, savory, and totally satisfying. They’re oil-free, packed with colorful veggies, and loaded with plant-powered protein. Each bite is bursting with flavor and leaves you feeling full and nourished without the heaviness.

Ingredients

Main Ingredients

  • 4 oz (116 g) dry noodles (rice noodles, udon, or ramen), cooked to yield ~3.5 cups
  • 1/2 cup dry textured vegetable protein
  • 1/2 cup hot water (to rehydrate TVP)
  • 1 cup broccoli florets
  • 1/2 red bell pepper, thinly sliced
  • 1/2 cup shredded carrots
  • 2 green onions, sliced (plus more for topping)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • Optional: sesame seeds or chili flakes for topping

Sticky Sauce

  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp maple syrup or date syrup
  • 1 tbsp rice vinegar or fresh lime juice
  • 1 tbsp hoisin sauce or peanut butter
  • 1 tsp sriracha or chili garlic paste (optional for heat)
  • 1 tsp cornstarch (or tapioca starch) + 2 tbsp water (to thicken)

Instructions

  1. Cook 4 oz (116 g) dry noodles (rice noodles, udon, or ramen) according to package directions until al dente. For rice noodles, soak in boiling water (off heat) for 5–10 minutes or boil 3–5 minutes; for ramen, boil 2–3 minutes; for dried udon, boil 8–12 minutes. Drain, rinse briefly with cold water to prevent sticking, and set aside to yield ~3.5 cups cooked.
  2. Place textured vegetable protein in a bowl and cover with 1/2 cup hot water. Let sit for 5–10 minutes until soft. Drain any excess water if needed.
  3. In a large nonstick pan or wok, add a splash of water, then sauté garlic, ginger, and the white part of the green onions over medium heat for 1–2 minutes.
  4. Add broccoli, bell pepper, and carrots. Stir-fry with a little more water as needed to prevent sticking. Cook for 3–5 minutes until just tender.
  5. Stir in the rehydrated TVP and cook for 1–2 minutes to absorb flavor.
  6. Whisk together the sauce ingredients in a bowl. Pour over the pan mixture and stir gently until it thickens and everything is coated—about 1–2 minutes.
  7. Toss in the cooked noodles and stir until fully combined and heated through.
  8. Plate, garnish with green onions, sesame seeds (optional), and enjoy warm!
