Ingredients
- 3 very ripe bananas, mashed
- 3/4 cup coconut sugar or brown sugar
- 1/2 cup unsweetened applesauce
- 1/4 cup plant milk
- 1 tbsp apple cider vinegar
- 2 cups all purpose flour or oat flour works great for gluten free
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg optional but very good
- 1 tsp vanilla extract
Optional cinnamon swirl topping
- 2 tbsp coconut sugar
- 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- In a large bowl, mash the bananas really well. Add coconut sugar, applesauce, plant milk, vinegar, and vanilla. Stir until smooth.
- Add flour, baking soda, salt, cinnamon, and nutmeg. Gently fold until just combined. Do not overmix.
- Pour batter into the loaf pan. If using the cinnamon swirl, mix the sugar and cinnamon and sprinkle evenly over the top.
- Bake for 50 to 60 minutes until a toothpick comes out mostly clean.
- Let cool at least 30 minutes before slicing. It firms up as it cools and gets even better after a few hours.
