Cinnamon Banana Bread

This Cinnamon Banana Bread is oil-free, perfectly sweet, and has that classic soft texture everyone loves.

Ingredients

  • 3 very ripe bananas, mashed
  • 3/4 cup coconut sugar or brown sugar
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plant milk
  • 1 tbsp apple cider vinegar
  • 2 cups all purpose flour or oat flour works great for gluten free
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg optional but very good
  • 1 tsp vanilla extract

Optional cinnamon swirl topping

  • 2 tbsp coconut sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. In a large bowl, mash the bananas really well. Add coconut sugar, applesauce, plant milk, vinegar, and vanilla. Stir until smooth.
  3. Add flour, baking soda, salt, cinnamon, and nutmeg. Gently fold until just combined. Do not overmix.
  4. Pour batter into the loaf pan. If using the cinnamon swirl, mix the sugar and cinnamon and sprinkle evenly over the top.
  5. Bake for 50 to 60 minutes until a toothpick comes out mostly clean.
  6. Let cool at least 30 minutes before slicing. It firms up as it cools and gets even better after a few hours.
