Ingredients
Apple Pie Cups
- 2 apples, peeled and chopped
- 1 cup all purpose flour
- 3/4 cup rolled oats
- 2 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp salt
- 1/4 cup coconut manna, melted
- 3/4 cup maple syrup
- 1 tbsp chia seeds
- 1 tbsp lemon juice
- 1 tsp vanilla extract
Icing
- 1/4 cup powdered sugar
- 1-2 tbsp unsweetened soy milk
- Dash of vanilla
Instructions
- Preheat your oven to 350°F (175°C).
- Grease or line a muffin tin.
- In a large bowl, add the chopped apples, lemon juice, maple syrup, vanilla, and chia seeds. Stir and let sit for a few minutes so the chia seeds can absorb some liquid.
- Add the flour, oats, cinnamon, baking soda, and salt. Mix well.
- Pour in the melted coconut manna and stir until fully combined.
- Evenly divide the mixture between 12 muffin cups.
- Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
- While the cups bake, mix the sugar and soy milk in a small bowl until smooth.
- Let the apple pie cups cool, then drizzle with the icing.
