All the cozy apple pie flavors, baked into individual cups you can grab and go. Simple, filling, and perfect for prepping ahead.

Ingredients

Apple Pie Cups

  • 2 apples, peeled and chopped
  • 1 cup all purpose flour
  • 3/4 cup rolled oats
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut manna, melted
  • 3/4 cup maple syrup
  • 1 tbsp chia seeds
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

Icing

  • 1/4 cup powdered sugar
  • 1-2 tbsp unsweetened soy milk
  • Dash of vanilla

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line a muffin tin.
  3. In a large bowl, add the chopped apples, lemon juice, maple syrup, vanilla, and chia seeds. Stir and let sit for a few minutes so the chia seeds can absorb some liquid.
  4. Add the flour, oats, cinnamon, baking soda, and salt. Mix well.
  5. Pour in the melted coconut manna and stir until fully combined.
  6. Evenly divide the mixture between 12 muffin cups.
  7. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the cups bake, mix the sugar and soy milk in a small bowl until smooth.
  9. Let the apple pie cups cool, then drizzle with the icing.
